On occasion, during the week, my husband will request meatball subs for dinner. Working a full time job and having a toddler usually means that I do not have the time to make my grandmas sauce. So I do the next best thing…I use sauce from a jar. My favorites for meatball subs are Prego (meat flavored) or Chefs, a local restaurant here in Western New York. Both have a sweet, meaty, savory flavor which to me, is perfect for meatball subs.
Make meatballs as directed in an earlier post (here). Pour the jar sauce into a medium sized pot. Add in meatballs once ready. Let them cook in the sauce on low heat for at least an hour…longer if you have the time.
About 20 minutes out from dinner, preheat the oven to 350 degrees Fahrenheit. While the oven is preheating, separate your rolls and add a mix of sliced provolone and mozzarella cheese. Once the oven is preheated, toast the buns until the cheese is completely melted, about 10-15 minutes.
Once the cheese is melted, remove the buns from the oven, add your meatballs (I usually cut them in half), top with a little extra sauce and grated/shredded Parmesan cheese.
